About Fermentation

Slow down, get curious, and learn the art of fermentation.

Fermentation is one of the oldest ways humans have preserved food and one of the most powerful for supporting flavour, gut health and everyday wellbeing. This hands-on, welcoming workshop invites you to explore the fundamentals of fermentation and learn how to make simple, probiotic-rich foods at home with confidence.

Led by Aleksandra (Alya) of Britten’s Botanicals, the session combines practical making, tasting and gentle science. You’ll be guided through the principles of fermentation, why fermented foods are so beneficial, and how they can be easily incorporated into everyday life without complication or fads.

Together, you’ll make your own jar of sauerkraut, sample a range of homemade fermented vegetables and drinks, and enjoy a taste of kombucha. You’ll also take home a SCOBY and clear instructions on how to brew your own kombucha, allowing the learning to continue long after the workshop ends. The session includes tea and cake, with time to enjoy the gardens and grounds at Mannington as part of your visit.

This workshop is suitable for complete beginners as well as those with a growing interest in fermentation. Alya creates a warm, supportive space where curiosity is encouraged, questions are welcomed, and learning happens through doing. The focus is on practical skills, traditional food knowledge, and the quiet wellbeing that comes from making something with care.

About the tutor

Aleksandra (Alya) Britten is the founder of Britten’s Botanicals. Her work is rooted in traditional plant knowledge, fermentation and natural methods of preservation, shaped by lived experience, extensive travel, and hands-on learning from diverse food cultures.

Through her workshops, Alya shares practical skills alongside a deep respect for nature, helping people reconnect with food, flavour and wellbeing in a grounded, accessible way. Her teaching style is calm, generous and experiential, encouraging confidence rather than perfection.
